Any advice on cooking sunny side up eggs? I was cooking for someone recently who wanted sunny side up eggs which I never cooked even when I could see and was really nervous about it. Actually, I think I did try cooking them once when I could see but broke the yolk when I turned them and I think I didn't try again.
Anyway, the first time I cooked them for him, I made him do the flip so I wouldn't be guilty of breaking the yolk.
The next time I got the idea to use a canning jar lid to break the egg into inside of the skillet. I knew that would make finding the egg to flip easier. I also kept track of the cooking somewhat by feeling the top of the egg.
How do those of you who prefer eggs this way gage the doneness? I waited until the top of the yolk warmed up a bit then flipped and cooked for a short time (that was a total guess) but I know some don't flip the egg at all with this method. How warm/hot should the top of the yolk get so that it safe for eating and yet not be overdone?

I never flip them.
I put a top on and cook at low heat until done.
I'm not sure if that's sunny side up, but the yokes rise and such just the same.
Use butter or oil.
When finished, if you have a pan that doesn't stick you can just allow the eggs to slide on to the plate.
How long do you cook them with the lid on, forereel?
Depends on how hard you want them to be.
When I say hard, I mean how much yoke you want to run.
I don't cook by time, I cook by how things feel. Test it a bit.
When you feel there solid around the edges and whole, you can feel the middle yokes. They won't break at that point.
Two eggs in a small to medium pan works, so you have to cook each persons separately, if I'm making sense?

I don't think there is a difference actually. The only thing I can think is if you don't use a top, flipping makes the eggs cook in that fashion.
Seems you need the top to make them rise correctly.
